1. Crispy Chicken Salad with Healthy Honey Mustard

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 4 cups mixed salad greens (spinach, arugula, lettuce, etc.)

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1 avocado, sliced

  • 1/4 cup almonds, chopped

  • Olive oil

  • Salt and pepper to taste

For the Healthy Honey Mustard:

  • 2 tablespoons non-dairy yogurt

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat oven to 400°F (200°C).
